We pay our respects to the Traditional custodians of country, to the Elders, past and present. We acknowledge today’s Aboriginal community on all of lutruwita, who are the custodians of this island, and we recognise their continuing connection to land, waters, and culture. Always was, always will be.

Winter on the island

lutruwita/Tasmania might be an island with a reputation for chilly winters, but really it is an island where there is so much going on. Winter is a  time to explore what is happening at the epicentre of food and agriculture on this island and islands beyond.
In July, leading researchers and thinkers will be in Launceston to share a feast of food and ideas at the 25th Symposium of Australian Gastronomy, ISLAND, emerging possibilities from the undercurrents.

As a Unesco Creative City of Gastronomy Launceston will host this significant event from 5th to 8th July 2024. Set amid Launceston's cutting-edge newest buildings at the University of Tasmania's Inveresk campus and the new St Lukes HQ, the symposium investigates themes encompassing island products and economies, Indigenous stewardship and interpretations, fermentation, food security and justice, education and health. Speakers include international professionals and thought leaders from the Pacific Islands, New Zealand, Tasmania and interstate with feature dinners and visits to the iconic Harvest Farmers' Market and the Design Centre. On Saturday 3rd August bring your own jar and head on down to a special fermentation-focused Harvest Launceston Community Farmers' Market. From 9am – 11am, create your own sauerkraut through a self-guided tour of ferment stations, where enthusiasts explain the science and art of fermentation.

In the evening FermenTas invites you to join us at a feast for the senses with some Fire + Ferment at Timbre at Velo, Legana. D
istinguished chef Matt Adams is creating an indulgent shared long table banquet of all that is fabulously fired and fermented to create warmth on a deep winter August night. Start with mulled cider around the fires to warm up the evening, before moving inside for a banquet of fired and fermented dishes  with matching fermented beverages...aka wine and beer!

agriCULTURED is the midwinter celebration of the contribution of the agrifoood sector to our culture, community and economy and this year runs from the 1st to 4th August.  This is just a taste of what is happening this year. See the full program.

 

Meanwhile, back at the Fermentation Hub, construction is underway and FermenTas is still seeking Expressions of Interest. For those who have already submitted, we will be in touch with you all soon as we finalise the equipment list for the hub.
