Fruit Waste Project

Fruit Waste Ecosystem

FermenTasmania has now commenced work on its watershed research in the Fruit Sector. We are working to investigate the viability of diversion of suboptimal fruit and fruit waste into high-value fermented products, including ready-to-market and dried nutraceutical products.

Tasmanian State Government Funded

Thanks to the funding by the Tasmanian State Government, we hope to identify an entirely new product ecosystem that could add exciting new businesses, jobs and millions of dollars to Tasmania's economy, and continuing to add to its reputation as a high-quality food destination and a global leader of excellence in fermentation.

In addition, if the Project creates successful outcomes, it will add to the spiral toward excellence that is being created in and around Launceston, and will help us achieve our goals of 650 new jobs by 2030.

Current Phase

We are processing data from a Fruit Survey witha focus on sub-optimal fruits and fruit by-products and will publish that soon!

We are also working on identifying possible uses of Fruit Waste to create revenue and jobs in Tasmania.

Project Stages

The Project will include the following stages:

  • Stage 1 - Existing Target Fruit Ecosystem Report– published Mar 2024
  • Stage 2 - Fruit Waste Report
  • Stage 3 - Ecosystem Viability Report
  • Stage 4 - Ecosystem Trial Report
  • Stage 5 - Funding Report
  • Stage 6 - Ecosystem Support Report

Each Report will be backed by high-level research, surveys, and ecosystem stress-testing so that we can make compelling predictions about the value of the new ecosystem in the short and long term.

All Reports will be made publicly and widely available as a way to help facilitate the creation of the proposed new ecosystem.

We are working toward a deadline for the project of Q3 2024 and more details of each stage will be posted on this website as it becomes available.
