deliciousness with fermentation

The days might be short, but mid winter in Tasmania is to be indulged by exploring the magic of fermentation. First up explore the fifth taste, umami, with local food producer Chris DeBono and chef Rhys Hannan.
Then get cultivated at the unmissable agri food festival agriCULTURED from 3rd-6th August. 
 
Exploring Umami: A Miso Cooking Class.
Elevate your cooking with umami, the fifth taste and FermenTas On 20th July 2023. During this three-hour course, you will be led by Chef Rhys Hannan through a miso-inspired menu, learning the various ways to use this multi-dimesional ingredient. You will also hear from Meru Food's Chris DeBono on the origins of miso and producing it locally. You will leave feeling inspired, confident, and with a jar of Umani Pantry's newly released line of miso in hand. The evening will culminate in a shared meal and glass of wine.

On 6th August bring your own jar and head on down to a special fermentation-focused Harvest Launceston Community Farmers' Market. From 9am – 11am, follow the journey of lactic acid bacteria as you create your own Kimchi through a self-guided tour of ferments stations, where enthusiasts explain the science and art of fermentation. 

Fire + Ferment@Timbre
In the evening FermenTas invites you to join us at a feast for the senses with some Fire + Ferment at Timbre @ Velo, Legana. Distinguished chef Matt Adams is creating an indulgent shared long table banquet of all that is fabulously fired and fermented to warm the cockles of the coldest of hearts on deep winter August nights. Start with mulled cider around the fires to warm up the evening, before moving inside for a banquet of fired and fermented dishes  with matching fermented beverages...aka wine and beer!

The University of Tasmania is making learning about fermentation more accessible. The fully fee-waived – free – Undergraduate Certificate in Fermentation has been extended, and enrolments are now open for Semester 2, 2023 starting on July 10th.
 
The Undergraduate Certificate in Fermentation offers the opportunity to delve into the fascinating world of fermentation. Made up of four comprehensive units (one core unit and three electives), this program equips students with the introductory knowledge and essential skills necessary to embark on a successful career or further studies within the rapidly growing fermentation sector.
 
Throughout the course, participants will immerse themselves in the science and art of fermentation through a dynamic blend of engaging online content, immersive hands-on laboratory sessions, and the invaluable experience of a work placement or industry project with esteemed local breweries, distilleries, or food production facilities. Throughout the program, students will explore diverse subjects ranging from the intricate biology of microbes to the fundamental principles of food and beverage production and they can choose to upskill in areas such as food regulation and quality management. Moreover, students will acquire practical skills that will empower them to create delicious, fermented products.
 
Pursuing an Undergraduate Certificate provides participants with an excellent opportunity to develop job-ready skills in a field of their interest. It enables them to showcase their dedication and aptitude to prospective employers or to evaluate their passion for the subject before committing to more extensive studies.
